I’ve had a rough couple of months or so. Actually, I think it’s just been one month, but it felt longer. It was awful. My SodaStream was on the fritz. Worst First World problem ever! Especially for a cocktail-lover, like myself. Buuuuuuut it’s back now, and I’m so happy! To celebrate that, and the lavender syrup I made yesterday, I present you to . . . The Spa Day cocktail! I call it that because it has soothing lavender, and because cucumbers will always be equated with spa water in my mind.
I used pickling cucumbers, because I had them from my farm share, and because their strong flavor means you don’t have to muddle! I love muddling things like herbs and berries, but since cucumbers look so classy floating in a drink, I hate to ruin that by pounding them into mush. Pickling cucumbers allow you to get the flavor in the drink without ruining the aesthetics. If you just have regular cukes, you can always muddle some and use more as garnish, or just muddle, and not worry about how it looks.
If you are muddling, do that first. Put 4-5 cucumbers in the bottom of a collins glass, add a splash of gin, and mush them up with a muddler or the back of a spoon. If you’re not muddling, just put in the cucumber slices, and move straight to adding the booze.
You’ll add two ounces of tequila, and a half an ounce of gin. Next, add about half an ounce of lavender syrup, and stir.
Then fill a separate glass with ice, fill it with soda water, and then stir to chill the soda. If you store soda water in the fridge, you can disregard this step.
Pour the soda into the collins glass with the rest of the ingredients. Stir again, and sip . . . and relaaaaaaaax.
